Japanese tuna sandwich

japanese tuna sandwichThere is not much to be said about this sandwich except that these flavours are awesome together! Pickled ginger, soy, sesame, mirin. Whack them together with a bit of mayo and tuna and you’ve got yourself a tasty little sandwich in a few minutes.

I had a similar sandwich in a café here last week and it was so salty and sweet and tangy that I just had to replicate it at home. I didn’t toast mine because the bread was so fresh that it was impossible to improve with toasting. The toasted version I had in the café however, resulted in gooey, melted cheese and crunchy, crusty bread which was just what I felt like on that chilly wet afternoon.


170g tin plain tuna in water

1 tablespoon mayo, plus extra for spreading

1 tablespoon soy sauce

1 tablespoon mirin

½ teaspoon sesame oil

1 teaspoon toasted sesame seeds

1 tablespoon chopped pickled ginger

2 chopped eschallots

4 slices fresh bread

6 thin slices cheese

handful baby spinach leaves


Mix together all ingredients except bread, cheese and spinach leaves.

Spread bread with mayo, top with tuna mix, cheese and spinach leaves.

Toast in sandwich press if desired.

Makes a sandwich for you and one for a friend too.
